GROWING INSTRUCTIONS

Sow Hollow Crown Parsnip seeds in early spring as soon as the soil can be worked. Plant seeds 1/2 inch deep in rows spaced 18 inches apart. Ensure the soil is well-drained and free from stones to allow the roots to grow straight.

Germination can take 2-3 weeks, so be patient. Keep the soil moist but not waterlogged. Once seedlings are established, thin them to 3-4 inches apart to give each plant room to develop. Harden off seedlings by gradually exposing them to outdoor conditions before transplanting.

Parsnips thrive with regular watering, especially during dry spells. Avoid fertilizing as this can lead to hairy roots. Harvest after the first frost for enhanced sweetness. Dig up on a dry day, trim leaves close to the crown, and store in a cool, dry place. Enjoy in soups, stews, or roasted.
